For last few years, I have been making something simple like pasta, sandwiches, pulavs etc for lunch that I can easily pack for Ishaan. So I usually make Indian dishes for dinner. But lately once in a while the child asks “ani sheet? (rice again)?” or “chupati nakka aaji (I don’t want chapati)”. So I am consciously trying to make something different. He also was asking for chicken, so I decided to make this baked chicken which I had seen many times on TV. I served it with a simple bulgar wheat salad. We all loved how juicy, tender and delicious the chicken turned out.
Ingredients:
4 large pieces of chicken thighs
1 cup thick buttermilk (or use yogurt thinned and beaten well)
1/2 tea spn chilli powder
Olive oil
1/2 cup parmesan cheese
1/2 cup Italian breadcrumbs
1/2 tea spn each of dried oregano, parsley
Salt
Method:
Add chilli powder and salt to buttermilk and mix well. Add the chicken pieces to it and keep it aside for few hours (I refrigerate it).
Heat the oven at 375 for 10mins.
On a dry plate, mix cheese, breadcrumbs, oregano, parsely.
Roll the chicken pieces in the dry mix. Spread some olive oil on a oven safe dish (I used cast iron pan) and keep chicken pieces on it.
Bake the chicken for 15mins and then turn and bake another 15 mins. (The time depends on thickness of chicken, so for first few times, check if it is cooked after 10mins).
Serve hot.

Looks great!! My son also asks me the same question, ‘Chapathi again???’ (said in a whiny tone). Maybe I’ll try this out with some plain pasta in tomato sauce 🙂

Love your blog! Will definitely try this. I’ll be making it in a microwave which has a convection setting. Can u tell me if I need to pre-heat it and to what temperature? How long is it likely to take in a microwave?
Sorry Roshni, never tried baking in microwave. You have to do some trial and error.

Soma, It is bulgar wheat salad. I got quick cooking bulgar wheat. Cook it according to instructions and keep aside. Make a dressing of lemon juice, olive oil, salt, pepper. Cut tomatoes, cucumbers into small pieces. Cook some corn. Add tomatoes, cucumber, corn, jalapenos(optional), chopped coriander leaves, chopped mint leaves(optional) and the dressing to bulgar wheat. Mix well and serve.

This recipe looks really good – I am not a fan of very spicy food but I’ll halve the amount of chilli and I think it will suit me fine! Do you think it would be nice served with boiled rice and naan bread?
Sally, this is a completely dry dish, so I am not sure how it will taste good with rice/naan. But if you like dry dishes with them, go for it

this question is not related to your recipes – but I am emailing you since to dont live in India. I live in NZ and get raw frozen prawns. I defrost the praws by leaving out and then use defrost option in the micro wave. when I fry in hot oil or make any other dish -the prawns give out 1/2 liter of water. The prawn fry does not taste good
any idea on how to panfry these prawns

Try drying them on a paper towel before cooking. Not sure if you could do something else
