What is Ash Gourd Raita?
Ash gourd raita is a cooling Indian yogurt side dish made with ash gourd and plain curds. In this version, fresh ash gourd is grated and mixed with a simple tempering.

Ingredients
- 2 cups ash gourd, peeled and grated
- 1 to 1 and 1/2 cups plain curds/yogurt, whisked

For Tadka
- 1 teaspoon oil
- 1/2 teaspoon mustard seeds
- 1 teaspoon urad dal
- 1–2 green chillies, chopped or slit
- 1 sprig curry leaves
- 1 teaspoon grated ginger
How to Make Ash Gourd Raita
- Prepare the ash gourd.
Peel the ash gourd and remove the soft seed portion if needed. Grate the firm white part using a grater. - Remove excess water if needed.
Ash gourd releases a lot of water. If it looks very watery, gently squeeze out some excess water. Do not squeeze it completely dry, because a little moisture keeps the raita fresh and juicy. - Make the tadka.
Heat oil in a small pan. Add mustard seeds and let them splutter. Add urad dal and fry until it turns light golden. - Add aromatics.
Add green chillies, curry leaves, and grated ginger. Fry for a few seconds until the ginger smells aromatic and the curry leaves sizzle. Do not brown the ginger too much. - Mix with ash gourd.
Add this hot tadka to the grated ash gourd. Mix well so the flavors spread through the vegetable. - Add curds.
Add salt and whisked plain curds/yogurt. Mix everything well. - Serve.
Serve immediately or chill for a short time before serving. If keeping for later, add curd closer to serving time.
