I like any egg dish. This is one of the easy dishes from my Pachi(Mom’s sister is called pachi in Konkani). She prepares this in those innumerable dinner parties at their home. A delicious dish with minimum work.
Usually this can be served with chapathi or roti or rice.
Ingredients:
5 eggs
1/2 cup onion
3-4 green chillies
1/2 tea spn pepper powder
4-5 strands coriander leaves
Oil/ghee
Salt as per taste
Method:
Heat oil or ghee, add green chillies(slit into halves) and finely chopped onion. Fry till onions turn slightly brownish. Add half the coriander leaves and a little salt. Spread out the onions so that it covers the full pan. Break eggs and add on the onions. (There should be a thick layer of eggs on the onion layer). Sprinkle coriander leaves, pepper powder and salt. Cook covered until eggs are completely cooked. Cut into pieces and serve hot.
Serves : 2-3

And one more thing..Don’t we have to beat the eggs or pour it just like that…I was confused abt this part ,but i beated it finally.

I never expected such a simple recipe to turn out so good.5 eggs scared me but the result was yummy! Me and my hubby both loved it.
And next time i will try adding mushrooms,capsicum etc.
My mom used to make with potatoes with topping of egg and thats how i always do it fry onions with kadipattas, green chillie and few peices of garlic, then add fine small potatoes and fry very well with little haldi in it, coriander leaves, salt, once fried very well, u should add the eggs. The best way for the eggs is beat the white separately once beaten well then add the yoke, mix it and add to the topping of the potatoes, in this way u get a thick layer and u dont have to add more eggs.
This one has become an all time favorite at our home, any time some one asks me for a recipe I simply direct them to aayi’s recipes.

Let me share a favorite recipe of my husband, (I am a total veggie).
Heat some oil (one tsp) in a pan, and one’s heated layer it to cover the entire pan, with either fine needle chips or crush some of those yummy flavored packet chips. Sprinkle some water (just a teaspoon or so to moisturize/dampen the chips slightly.
Break five eggs in a separate bowl; add ginger, garlic, green chili paste, black pepper powder, coriander and small qty of mint chopped, salt to taste. Mix all well with a fork and pour this yummy mixture over the chips in the pan and cover it and cook it in it’s own steam.
If you are cooking for the children, you could add grated cheese just before the eggs are done.
