
Ingredients:
Boiled Eggs 5
Onions 2
Tomatoes 4
Chilli powder 2 tea spns
Chicken masala or garam masala 1 tea spn
Mustard seeds 1/4 tea spn
Jeera 1/4 tea spn
Coriander leaves
Salt
Oil
Method:
Heat oil and add mustard & cumin seeds. When they start spluttering add finely chopped onions. Fry till onions turn slightly brownish. Add finely chopped tomatoes (or cooked and mashed tomatoes). Fry till oil seperates. Then add sufficient water, chilli powder, chicken masala(or garam masala), salt. Cook for 5 minutes. Put eggs(put some slits on eggs so that the masala reaches inside of the egg). Cook for 2-3 minutes. Garnish with coriander leaves. Serve hot.

its very Delicious one. N i felt it’s one among the best south Indian dish. i suggest every one to try this atleast once.
My husband just loves dish made ouot of eggs…

My version:
After adding the tomatos in the above recipe.. cook for 2 mins.. cool the mixture and grind it… then again fry it till the oil seperates.. This stops the dish from leaving water at the edges..

In all egg and non-veg dishes I like to add a little haldi (turmeric) powder. In the above recipe I would add 1/2 tsp haldi powder.
Otherwise we make this at home quite regularly. Its an absolute fantastic egg curry to make.
Hi. Welcome back. Fascinating to hear how your child got along back home in India – contrary to your initial apprehensions, I suppose. I have a cousin in Norway, with kids half Norwegian. One could not imagine how they would cope with conditions in sweltering. humid Mangalore, mosquitoes (which had a field day on their delicate fair skins), disparate cultures, “different” toiltets etc. But, goodness, did they love it. They keep coming back whenever they get the opportunity. Kids pick up “good home vibes” more easily, I guess. Anyway, the egg curry with tomato gravy is one of those really simple yet ultimate comfort dishes. And it allows so many easy variations. according to mood. I added few curry leaves, pinch methi seeds in bagar, and 1 heaped Tbsp of tomato paste for added flavour/colour.
