Hope you all had/having a happy Valentine’s day.
We usually don’t celebrate this day. But this year, I wanted to do something special. May be because of all the celebrations I am observing in blogs and on TV. So I decided to bake this cake. I wanted to keep it as simple as possible because V does not like too much icing. He loves simple plain cakes.
I tried to decorate with whipped cream but no matter how much I refrigerated it, it was becoming watery as soon as it touched the cake. So finally I left it as it is.
I just wonder sometimes…Will he ever get bored of this cake? He likes this simple egg cake more than any fancy cakes that I bake. He even skips dinners after it. He wishes I would let him eat it when it is just out of oven, HOT.

I was hopelessly praying for a konkani recipie website..
I am still in ‘kindergarten’ in the “cooking” school,plus I have the challenge of making North canara dishes(As Aj s from Honnavar basically) without much eating knowledge of it where as I am a pakka mlore amchi..
So it s fun in the kitchen with piyavu v/s kando and nimbiyo v/s nimbu and kattuka v/s kodu..
though I take loads of online lessons from my Mayi who s a fantastic cook..I now have pictures too to know where I go wrong! thank you thank you thank you akka!!

I saw your comment on the Konankai yahoo group and I think you are reacting very very strongly to any criticism. When I suggested that your mom may have got the recipe from Jaya Shenoy’s book, you got flabbergasted. You had a similar reaction when someone else told you that you need to improve on the writing and creatie presentation. I don’t understand why you not learn from criticism rather than just yelling back.. well, not my call. I just felt that your email to Sangeetamai was uncalled for.. No one says that you are not doing a good job on your website.. so just chill
Shilpa: If you might have observed my blog since last couple years, you would have not missed the point that I do learn from constructive suggestions/criticism. In the days when allegations of plagiarism/content theft is creating a lot of heartburn for many bloggers and the like, I believe I should always make it clear that – I do credit to every source that I use recipe from and if someone brings it to my notice I do take whatever action I can take. I agree I am no perfect. So is everyone. I don’t think that my response was strong; you may think differently and I respect your feelings. Thanks for the comment A.

I had done the simple egg cake with vanilla essence yesterday as a surprise for my husband. Just like urs, my husband doesnt like iced cakes too. He loved it absolutely and we had a good V Day too 🙂 Wish you both a happy V Day too 🙂
It doenot matter how the cake looks, even though it is cute. What matters it u made it with love.
Was the cake cooled before you spread the icing? It has to cool for a couple of hours at least imo. Perhaps that was the reason the icing flopped so badly?
Shilpa: Yes Aravassu. It was completely cooled. The whipped cream was very difficult to handle. As soon as I took in the icing bag, it started flowing. Then I froze it for sometime and again tried. I think even the heat from my hand was enough to melt it :(. I used cream of tartar in the cream, but it was of not much help. Have you tried icing a cake with whipped cream? Do you have any suggestions for making the cream hold its shape? We both don’t like butter cream icing, so I want something else to replace it. Please let me know. Thanks

I have tried your simple egg cake twice.It’s awesome.That’s my hubby’s fav too….
I always frost my cakes with whipped frosting and it s never a prob.You have done some amazing cake decorations…so I guess there was some prob with the whipped frosting you have bought.

I baked a cake on Valentines day…
I followed your recipe for Date cake(eggless)…..but I added eggs to my cake…..and needless to say, it turned out to be amazing!!
It was absolutely gorgeous and so soft, it wud almost melt in your mouth!
My folks LOVED my cake…..
