
I had a large stock of bananas and carrots with me and that was the time I was learning to bake the cakes. Before that I never knew about carrot cakes. Thanks to google, I found a recipe for banana-carrot cake. It looked very easy. So I baked it.
Grated carrots make this cake very very soft and tasty. One piece of this cake leaves you with full stomach. These days I bake a lot of carrot cakes since I keep a big stock of carrots always :). I will share some of them in coming days.
In the above picture, I have applied a bit of pink cream on the cake, it was just for fun :D.
Madhura baked this cake recently and sent me the gorgeous looking cake picture which I have pasted below. I didn’t know this cake can look so good :D. Thanks Madhura.

Ingredints:
All purpose flour or maida 1 and 1/2 cup
Sugar 1 cup
Mashed ripe banana (about 2 bananas) 1 cup
Oil 1/2 cup
Eggs 3
Baking powder 2 tea spns
Salt 1/2 tea spn
Cinnamon 1 tea spn
Grated carrot (about 3 med. carrots) 1 cup
Chopped nuts(optional) 1/3 cup
Method:
Beat together sugar, banana and oil. Add eggs, one at a time, beating well after each addition.
Add flour, baking powder, salt, cinnamon mix well. Stir in carrots.
Pour into greased baking dish. Sprinkle nuts.
Bake 40 to 45 minutes at 350ºF (or until a knife or skewer inserted in the center comes out clean).
Makes 10 to 12 pieces
Preparation time : 1 hr
shilpa i wanna try out this cake[of course with d help of my mom otherwise i don’t know how it’s gonna taste]but first let me know whether we can make this cake without using eggs [as we don’t eat eggs]will it taste good without eggs?Secondly,should d baking dish be of aluminium or steel?FINALLY,can we make this cake in cooker if one doesn’t have microwave?Sorry to bombard u with so many questions but isn’t it always good to ask & be clear about a particular dish before making it?I’m sure even u would agree!
Anu, I haven’t tried this cake without egg. I will try it and let you know. You can use any oven proof dish for baking this (You can use any dish in which you bake any other cake). I guess you can use cooker for baking this (I have heard people bake cake without oven, you might be knowing the exact procedure, I haven’t tried it). Hope this helps.

ur site rocks. I got married n settled in canada and each time had to call up mum for recipes. Now i see your site and no more recipe talks with her! I made ur date cake twice and it was awesome. Today i tried this cake. All was well but the batter in the middle of the cake was uncooked n sticky even after i baked twice to see if knife came out clean.
Wot cud be the problem?
Shilpa: Probably the temperature was not right. Keep it at a higher temperature next time and try.

I have tried simple egg cake and date cake. They are very good. Now I want to try this one. What is the purpose of cinnamon? Since we are not adding any essence, won’t it smell of eggs? Pls clarify

Hi Shilpa,i want to try this cake….last time i had tried some carrot cake ,but with shredded carrots, i did not get the carrot flavor.
In this recipie, Can i puree the carrots n use..?( Carrots r pureed n used in Brazilian style Carrot cake which tastes yummy ) ..Also as iv read on ur site in som other cake/muffin recipie that bananas can be used to repalce eggs right….so can i reduce the eggs say to 1 or 2 in this recipie or maybe omit the eggs totally..?

Am a regular reader of ur recipes and i love the way u present them. i tried this cake today as mentioned in the recipe. i added 3 eggs during the preparation but the smell of the egg was still persisting even after 2-3 hours after the cake was done. We were not able to take the smell of it..
Could u pls tell me what can be done to get rid off the egg smell in the cake..
Usually the banana, carrot and cinnamon overpowers egg smell. So I am not sure why you were getting so strong egg smell. Usually we add some flavoring like cinnamon, vanilla essence etc to overcome smell

I have been looking up at your site for the past 3 years. I found it when I googled for soft chapathis and then onwards started trying so many of your recipes like Methi Egg, Ghee Chicken,Ragi Idlis etc. We bought an OTG last month. Did you bake in middle rack? I guess heat at the top was more. Try keeping in middle rack next time, if it is still getting charred, try reducing the temperature of the oven and baking it for longer time
