Apple Cake With Pecans
Hope all the readers from US had a relaxing Thanksgiving holidays. I was working from home most of the time. Next few weeks will be very busy too.
I had couple of apples that needed immediate attention. I kept on thinking about different things to make with them. But finally I decided to go with this simple bread/cake. I made it on Thursday when we were finding it very hard to step out of home because of cold. I was bored of working and needed a break. The cake came out very delicious. The pecans gave a crunchy topping to the cake. This cake is mildly sweet, just the way I like it.
Ingredients:
1 apple peeled and grated (about 1 cup)
1 cup wheat flour
1 tea spn baking powder
1 tea spn vanilla essence
1/8 tea spn salt
1/2 cup (1 stick) butter softened
1/2 cup brown sugar
1 egg
1/4 cup chopped pecans
1 tea spn sugar (any normal sugar will do)
Method:
Preheat the oven at 350F for about 10mins.
Mix together butter, brown sugar, egg, essence.
Sieve flour and baking powder. Mix salt. Now add these dry ingredients into butter mixture a little at a time and stir. Add the apple and mix well.
Grease a bread loaf pan. Pour the mixture into the pan. Spread the pecans on top. Sprinkle the sugar.
Bake in the oven at 350F for about 40-45mins or until a knife inserted in the center comes out clean.
Serves : 3-4

i just made something like this last night..this looks too good. but i used walnuts….dont thik we get pecans here…

I usually make it round, DD feels happy that it’s a cake. like yours too.
Looks rich….the picture reminds me a lot of Grandma’s brand coffee cake.
i have made a similar cake with a variation. I layered the apple pieces instead of mixing them. By this way, the flavour of apple came out very well. I used walnuts instead of pecans. may shud try using pecans next time….
Hey! Very nice cake…it’s very similar to a recipe that I use! You can also use rhubarb or cranberries instead of apples, but this is definitely the season for apples…I had a heap and made applesauce…but I have four left…hmmm.:-)

Yes, you can use normal sugar
Is there a substitute for egg in this recipe. We dont eat egg, so an alternative will be good for us.
Leave out egg and try. It may come out well.
I made this today and came out well. Substituted with a over ripe banana for an egg as it is fasting day for us. Replaced pecans by walnuts. It is a keeper recipe.
For Spandana – replace an egg with a over ripe banana, works well.

Ur date cake recipe is still rocking in my family.I tried it several times in pressure cooker and always came out very very well.

I have a convention oven. I never tried baking in microwave. If you have tried any other cake in microwave, this will also work the same way.
what is pecans
It’s kind of dried nuts, if you don’t find them, use almonds or walnuts

Do we need the put the sugar as whole or does it need to be powdered?
If you are using granulated sugar available in India, grind it to a coarse powder. The powder need not be very smooth

Hi Shilpa,ur cake looks gr8 yet simple to make.U have mentioned to use whole wheat flour in the recipie.Can i use the whole wheat chapathi flour/Atta from Indian stores for this cake..? or do i need to use whole wheat flour availaible in the baking secion in stores here in Denmark.
Meenal, I think the whole wheat flour used for baking would give better results. However I use normal chapati atta for cakes/breads.

Next time I want to make double the quantity as the cake got over in minutes.I still feel like having some more…
What would be the baking time when I double the quantity? Would an hour be sufficient? For this quantity,40-45 mins worked fine for me.Please let me know..
Start with 45mins and then open the oven and check. Sorry, I have not tried doubling the recipe, so you need to do R&D
