Grilled chicken kabab
Kababs are V’s favorite way of eating chicken. So I make these simple kababs very often. I bake them most of the times, but when there is shortage of time, I like to grill them. I made these for a office outing few days ago. Simple, easy and very tasty.
Ingredients:
1 lb (0.4 kg) chicken
1 tea spn chilli powder
2 tbl spn thick yogurt
1/2 tea spn ginger paste
1/2 tea spn garlic paste
Salt
Spice powder(make a powder) -
3-4 cloves
1″ cinnamon
1/2 tea spn coriander seeds
Method:
Add all the ingredients to chicken and leave it for around 1-2hrs.
Grill them till they are done.
Serve with some lemon wedges.
Serves : 3-4
Preparation time : 20mins

I have a very similar quick fix recipe for chicken kabobs too, but I always make it in the oven. Did you use your grill pan? Love the grill marks on it.

Wow!!! Did you grill it in grill pan over the gas stove or in the electric grilling machine. Whenever I grill in the electric grill, I never get that perfect blackish tinge (like restaurant ones). How you managed to do that? How long you need to grill the chicken? Your grilled chicken kabab looks so mouthwatering. Thanks for the recipe.

Looks almost like home-made Tandoori Masala !!!
Whenever I cook chicken, it is never succulent and moist like they serve in the restaurants. DO you know how to achieve this ? Do you think they use meat tenderizer ?
Shilpa: Yes, boneless chicken. I don’t know about tenderizer. But try with tender breast pieces(you get these in the meat isle with all other different cuts of chicken), they work the best. Do not use the frozen chicken. Do not cook for long time, remove as soon as they are done. I cover the grill with a aluminum foil while grilling, so the moisture is retained. I use kashmiri chilli powder from Indian store for the red color.

As i mentioned in the recipe, all ingredients are added to chicken before grilling.
Can I use ready made tandoori masala instead of making the spice pwd? If yes, which brand would you recommend?Thanks!
Yes you can. I don’t use read made masala, so I don’t have any specific recommendations
Hi Shilpa, Could you please tell us in your recipe how long you cook on the grill pan, how long for each side of the pieces, do you turn it often or just once for each side, and do you cook initially on high and then turn to medium or low to get the grill marks? Thanks!
I turn only once. I grill them on high first and then slightly lower the heat, to get it cooked through (sometimes I cover with a aluminum foil, not necessary, but I have seen it makes cooking easier). I don’t know the exact time as I grill them till done, never check for time

I have a cast iron grill pan which can be used on stove. I just grill on that.

grill pans though available in Mumbai ,are not easy to get.I’m going to ask someone to get for me frm US.Can u suggest any specific brand?also some idea about the cost.

Nothing specific. Just buy any cast iron one. The one I bought was less that $30, can’t remember exact price.

i think kababs are the one in which the ingredients are minced together , especially the basic ones are shaped elongated or round or square shapes and then grilled or baked(at times). and served the chutneys or sauces.
the grilled chicken tht u have shown is called as tikka.
i believe i am right.
