Hi Shilpa,

I am one of the frequent visitor of your site. You are simple great!
I often come across this cream (malai) in your recipes but quite not sure where to find it here in US. All I see is cream cheese or whipped cream. Do they call it something different? Please suggest some store where I can buy it.

Shilpa: You can use any whipping cream, you can find it in dairy isle of any grocery store.

Hey Shilpa... made malai kofta yesterday for guests and it was a big hit. The only change was I added paneer to make the kofta. Thanks for this awesome recipe.:)

HI Shilpa,

After the success of Naan experiment ,the credit goes to you of course. I am all excited to try something new and what would be more better than malai kofta. I was just going through the recipe to check whether I have all the ingredients. I have some questions for you, 1)It may sound silly but I have never done this before so, How to blanch cashews is it same like blanching tomatoes?
2) You have mentioned cream in the recipe which cream it is?whipping cream/whipped cream?

Thanks in advance.

Shilpa: Yes, same as tomato. Whipping cream.

Hi! I am writing just after trying this recipe. It turned out really good and everyone liked it. Except that the color didn't turn out as in the picture.

I just wanted to ask what is the role of the corn starch here and can it be substituted with anything else?

Deepti

Shilpa: It acts as a binder and also makes the koftas crispy

hey shilpa just had a doubt regarding "malai kofta"..i have a north indian friend here and she had done malai kofta once and she had done kofta of only "paneer--->malai" and then she said that you can make koftas of different types but i dontknow whether they will be called "malai kofta"

Shilpa: Nandita, as far as I know, Cream in Hindi is called malai. The name malai kofta comes from the creamy gravy. (I am not very sure though). Most of the kofta recipes have paneer in them. But I did not add it.

Dear Shilpa

At first, let me compliment you on your website and your recipes. Both of them are simply great. Moreover, what I like about your site is how frequently you update the site with all the new wonders from your kitchen. GREAT JOB!!!

I tried the Malai Kofta recipe today and the gravy turned out superb but the Koftas didnt come out well...I didnt have corn starch and made the koftas minus that and I found my Koftas sticking to the pan as I shallow fried the Koftas...So, I conclude the corn starch is an important ingredient while making Koftas.
