Almond cookies

My aayi keeps reminding me about nutritional values of almonds and suggests me to add it to my diet. Every time she told me about it, I would go and buy one pack of almond. Last week, I found I had a huge pack of almonds at home. So I thought of making cookies with them. I tried the first recipe that I found
from here. I changed it a bit to suit our taste and also make them eggless. The cookies turned out to be awesome. I am going to make some more again now.
Ingredients:
1/2 cup butter
1/2 cup all purpose flour
1 cup(150gms) almonds
1/2 tea spn baking powder
3/4 cup sugar
1 tea spn vanilla extract
1/4 tea spn salt
Few chocolate morsels(optional)
Method:
Grind almonds into powder – it need not become very fine. Keep aside.
Preheat the oven at 375F for about 10mins.
Mix butter and sugar till they form a uniform mixture.
Now add almond powder, baking powder, vanilla extract, salt, all purpose flour and mix.
Make small balls from the mixture and keep them on a greased cookie sheet. Leave enough space between two balls as the cookies expand after baking.

Keep one chocolate morsel on the cookie (optional). Bake at 375F for about 12-15mins.

When they are cooled to room temperature, they become very crispy.
Makes about 2 dozen cookies

Very tasty cookies.Recently i posted almond cookies in my blog but my version has too many ingredients and quiet confusing.This is really simple but photo is not that attractive.Anyway i am posting jam centered cookies recipe now.Hope you will like it.

one question…. in the picture why the bottom of cookies looks more brown bcoz from top they don’t look like burned to me….\\

Shilpa: Nusrat, I had used a butter based baking spray on the sheet which made the bottom brown and very crispy.

Shilpa: The main purpose of beating both together to get any uniform mix without having any loose sugar. So mix it as much as you can.

December 29th, 2008 at 12:07 pmI made almond cookies several times from here which includes coconut too, if using sliced almonds, try using crushed in ziplock instead of powder, great flavor, lingering after taste..(http://simplyspicy.blogspot.com/2007/10/coconut-almond-cookie.html) chk this version out too. I shall try yours as well.

Also in case Priya is reading this, since she has mentioned that she bakes cakes in microwave with amazing results please please share the trick so that even i will b able to hv the pleasure of baking a cake.

December 30th, 2008 at 9:54 amhi mamta…………sorry i replied late….also you did not leave ur email id for me to reply to you….so am replying via this feed itself………for baking cakes use ur normal cake recipe……but add one pinch of baking soda to the cake batter….also you do not need to mix the batter too much…..and using a glass or microwave bowl ….micro the cake for about 5 mins…..check with a toothpick and immediately demould the cake when done……….in case you want to keep the cake for a longer period of time reduce the amount of sugar in the batter and pour a 3 or 4 tablespoons sugar mixed with water over the cake ..which retains the sponginess of the cake else it dries up too soon…….however you cannot make fresh fruit cakes with this method
