Orange in coconut milk(Kittale hannina rasayana)

From last few weeks, I am having trouble coping with blogging. I have tried my best to keep up with the storms of mails/requests/questions/suggestions I am getting, but all I want to do is, shut off the computer and concentrate on my other hobbies. There are so many unanswered mails/comments, I am loosing track, so if anyone didn’t get a reply, I am very sorry, it is not intentional. My cooking has been affected as well. I haven’t cooked anything interesting in a while. Since I have many drafts, I am just posting whenever I can..
This is one very simple “recipe” that I prepared a while ago. Rasayana is a popular Kannada sweet dish which usually has coconut milk(sometimes only milk), sugar or jaggery for sweetness and some kind of fruit. I was not aware of this version with Kitttale haNNu – orange, until I saw it in a Havyaka special article in a book. I loved the simplicity of this sweet dish.
Ingredients:
1 cup orange (peeled and separated)
1 tbl spn(approx) sugar
6-7 saffron strands
1/4 tea spn ground cardamom
1 and 1/2 cups fresh coconut milk
1 tbl spn thin poha(optional)
1/2 tea spn ghee(optional)
Method:
Soak poha in coconut milk for few minutes and grind to a smooth paste (poha is optional, I added it to give a bit of thickness to the dish).
Now add all other ingredients, mix and serve cold. (This dish is not cooked).
Preferably, do not use canned coconut milk, it gives a very different taste/smell to the dish.
To extract fresh milk from coconut, grind 3/4 cup coconut using 1/2 cup warm water to a coarse paste. Squeeze the paste (with hands or using a clean cloth) to take out the liquid. Save the liquid. Add 1/2 cup more water to the coconut and repeat the process 2-3 times more.
Serves : 2-3

Shilpa, you should definitely post as and when you feel like it. I’m sure everyone understands how it feels to be overwhelmed for various reasons! Dessert looks great. I’ve never tried orange with coconut milk. Sounds fabulous!

I love the simplicity of this sweet- perfectly refreshing for a hot day… of which we are now having none.
But still, we could pretend!
I am amazed at how similar rasayana is to certain Thai sweets; I recall one with water-chestnuts, another with bananas… sometimes they use bai toey- very closely-related to kewra, for flavouring; sometimes rose, orange-blossom, or jasmine flowers (or essence/extract of these). Sometimes palm gur is used as the sweetener- unless perfect whiteness is desired. Yours is very nice-looking. You have much patience to separate the oranges like this- now on to pickles!
P.S. Take a break for yourself- I did! (and it really helps!)

Very very new dish to me shilpa…i mean the only thing i make is with bananas (rasayana we make is without milk its just banana, sugar, cardamom and coconut). so this is a clever way of using orange. I think my daughter will love this!
what u need is a good break from blogging! i know u do feel cut off from the world….but it helps trust me! concentrate on ur hobby and come back….see how refreshed u r!

Have never been a fan of the banana rasayana, but the orange one sure appeals to me. Take your time Shilpa, its not that your wasting time or lazing. Just went and saw your ArtBlog and can see your hardwork there.
I just finished making and eating this for desert. I loved the taste of it. Had one orange only and made out of fresh coconut milk. Thanks Shilpa…this is going to be regular at home. Forgot to mention, omitted the ghee, anyway it was optional.
