Apple walnut cookies

My cousin was with us for long weekend. After a long time, meeting a family member was great. I cooked few new things for him. I wanted to make something for him and his friends which he could carry when he returned. Since he loves cookies and they are easy to make, I baked these cookies.
These cookies are very easy to make and taste great when they are fresh, they became a bit soft the next day. These are not very crispy(as much as I like). By the time I finished baking the whole batch, it got over. Three of us ate so much that, I had serious doubt if there will be anything remaining for him to carry. So I baked another batch. These were simply awesome.
I got this recipe from here.
Ingredients:
2 cups all purpose flour
1 cup peeled and finely chopped apple
1 tea spn baking powder
1 tea spn baking soda
2/3 cup butter
1 tea spn vanilla extract
1/2 tea spn salt
1 cup sugar
1 egg
1 tea spn cinnamon powder
1/2 cup walnuts
Method:
Beat butter and sugar. Add egg, vanilla extract and mix well.
Now add flour, baking powder, baking soda, cinnamon powder, salt and mix well. Now add apple, chopped walnuts.
Preheat the oevn at 375F for 10mins.
Lineup a baking sheet with parchment paper or spray baking spray(or apply butter). Keep small rounds of the dough on the sheet, take care to leave enough space between two cookies because they expand after baking.
Bake in oven at 375F for about 15mins or until golden brown.
Store in airtight container when they cool to room temperature.
Makes about 3 dozen cookies

tried this cookie..the dough tasted awesome..but somehow when i ended up baking it ..turned aout too soft….and its not because i didnt bake it enough…any ideas why u think it happened?
Shilpa: Was it soft after cooling too? When I tried it, it was fine for the first day.
yes it was soft after cooling ….wud really have been super if had hardened a bit…
Shilpa: Not sure Tanya, sorry. May be you could try baking them for tad bit longer next time. I think the usage of both baking powder and soda makes them soft. I will update the post after making them again soon.
apple and walnuts are a great combo. the cookies look so mouth-watering.

Look absolute yum considering the time they took to make. It definitely is a simple recipe. Tough just wanted to ask one thing, do you think these would turn out the same if i substituted the egg for a little dahi? This question comes because I follow a veg diet.

Have you started liking cinnamon in your sweets, Western-style? I just can’t stand the smell of it in anything sweet!
Shilpa: Sumitra, I too HATE cinnamon in sweets, but I feel cinnamon and apple goes really well. I normally use this combo, but for any other sweets, I replace cinnamon with cardamom powder.
It’s just not fair! Not only can you whip out glorious Konkani dishes, but you have this natural flair for our western baked goods too…and i’ve been cooking longer. I’m going to cry.
Yeah…apples and cinnamon are a good combo that can’t be denied….and if you consider what my favorite spice is, then you’ll know that the taste for certain spices in sweets can be acquired over time….but i know: cinnamon for savories….even I am starting to prefer cardamom over vanilla and cinnamon…to the point where I don’t notice it much because i drink it in coffee every day!

I agree, I think cinnamon and cardamom are acquired tastes. Have you tried the cinnamon available in Indian stores? The aroma is somewhat different than the American ones.
And i sure do say they tasted great and me and my friends loved them. We finished them in about 3 days!!!!

I made this 2 days back . Aroma & taste was great . U were right abt apple and cinnamon combo. Its heavenly. Only problem with my dough was that it was a bit watery and i had to add 2 more tablespoon of all purpose flour to be able to make rounds of the dough to get cookies.But they tasted great amy kid was hovering near the oven when the aroma reached his nostrils. He couldnt wait to get them out of oven.
One can imagine the outcome of those cookies once they were out of the oven.

Lovely n easy to make cookies….I too like my cookies crunchy n not soft….want to make them soon..Well, can i skip the baking soda to prevent them from becoming soft..wat do u suggest..?

Is there a difference between baking powder and baking soda? If yes, what is the the difference? Can we use baking powder instead of baking soda?
