But your recipe suggests I should definitely try it out one time, especially since you have added basil, one of my fav ingredients. Here we get soy cheese in every flavour possible - parmesan, cheddar, mozzarella, feta.. with pepper, cumin, ...etc.

So these days whenever a dish requires cheese, I use the soy version..you get almost the same taste as the original cheeses but with the added benifit of low-fat, and healthy cheese !!!

Last night, I a tried a pasta with home-made pesto (my own homegrown basil), zucchini and peas and added the soy feta to it - turned out very yummy and definitely low-fat, without any cream...the cheese melted nicely too!! So do try to find the soy cheeses..
