Gravy spice powder(Sarina pudi – Udupi style)

This is a special spice powder used in most of the Udupi gravies and sambars. This is very different than normal sambar powders. I like to make it fresh because it looses the aroma as days pass.

Few dishes where this can be used are beLe saru, puLi koddel etc

Ingredients:
4-5 red chilies
1 tea spn coriander seeds
1/4 tea spn fenugreek seeds
1/2 tea spn cumin seeds
Coconut oil
2-3 curry leaves

Method:
Heat oil and fry all the ingredients one by one. Take care not to burn anything. Powder all of them together. This powder can be saved up to 7 days. As days pass, the aroma of the powder decreases. So I prefer making it fresh whenever required.

    wow! thank you . dream come true.. now we can have the lovely aromatice udupi sambar at home… i miss this sambar.. earlier we had udupi hotels giving us this lovely.. no more is it availble in chennai

    Udupi’s Sarina pudi is used for rasam purpose, sor sambar a seperate powder is used
