Banana cake with rava (Eggless)

This recipe is from Deepa. Just 4 months back, I didn’t know about her. Since then, I interacted a few times and absolutely loved to get emails from her. When I came to know she is from my neighboring state Goa, I requested her to send some authentic Goan recipes. She sent two recipes, one was the prawn balchuan and the second was ‘banana cake’. She even mentioned that “It’s a different way of making a cake, with rava instead of flour”, but somehow, I just missed that line. But last week I was going through some of my old emails and I read more cautiously this time and was amazed to see a cake recipe without flour.
I have been going through different food blogs and saw dishes from different parts of India. But couldn’t find any Goan recipes. So this is my entry from beautiful Goa for the Independence day parade.
I baked this one today, just to be sent to the parade. I wanted to decorate it like Indian flag, but didn’t manage to get it right. When I bought different colored icings from Walmart, the lady on the counter asked me – “planning to decorate cake?”. I said “Yes, I am trying to learn”. She said “Don’t worry, however it looks, it will taste great”. That time I was 100% sure that I can decorate it well. Today I realized whatever she said was correct. I think I still have to try a lot before learning to decorate

Before this, I tried two varieties of banana cakes, this and with Pushpa’s recipe. Both were amazing. What makes this cake different is the amazing aroma of cardamom and no egg in it.
Ingredients:
Ripe bananas 3
Rava (wheat sooji) 1 cup
Sodium-bi-carb(baking soda) 1/2 tsp
Cardomom powder 1/2 tsp
Coconut milk 2 cups
Sugar 1/2 cup
Cashewnuts 1 tsp
Salt
I did not add salt and used 1 tea spn baking powder instead of baking soda.
Method:
Roast rava over low heat in a kadai until aroma wafts from pan. Soak the rava in coconut milk for 2 hours.
Mash the bananas and add to rava along with sugar. Add soda, salt and cardamom powder. Mix the cashews. Apply little ghee to cake mould (I used parchment paper in the baking tray), pour in the mixture.

Preheat the oven at 350F for 10mins. Bake for around 35mins at 350 F or until a knife put in center comes out clean.

Decorate in whatever way required (optional).

Makes 8 pieces
Preparation time : 10min (excluding the baking time).

I have just finish baking the eggless dates cake. The taste is divine.
The eggless rava banana cake is amazing. During the vacation I will definitely bake it.
It is a great relief to have access to so many eggless receipies.

Cake without all purpose flour and oil/butter was out of my imagination… Good one I will surely try it.

I’m from Goa and I do make this version of cake…sometimes I use mango too..u can use mixed fruit pulp too and its as good….ur site is good…thanks…my recipes are always using stuff thats available and I enjoy cooking….so keep up the good work…

METHOD I FOLLOWED FOR BANANA CAKE :-
LOW HEATED RAVA FOR 15 MINUTES IN KADAI TILL THE AROMA ARRIVED .
SOAKED RAVA IN MILK FOR 5 HRS (RAVA ABSORBED 80% OF THE MILK)
THEN MIXED THE SOAKED RAVA WITH SMASHED BANANA & SUGAR IN MIXER . ALSO ADDED BAKING POWDER
KEPT IN OVEN FOR 45 MIN .
CAKE DIDNT RISE & WAS NOT AT ALL POROUS
IT WAS STICKY
& WAS LIKE SHEERA, (INFACT SHEERA IS BETTER)
WHERE DID I WENT WRONG , I USED MIXER FOR FOR MIXXING ALL THE MATERIAL WAS THAT WENT WRONG ?

Shilpa: Yes, you should not use mixer for mixing. That would make the rava a paste.

Shilpa: Yes you can. But I haven’t tried. I heard it is made like idli, without weight.
its a very good recipe without using flour but I want to know can i make this cake in pressure cooker or Microwave please tell me as I don`t have oven

This is a good recipe.Is it possible use microwave insted of oven.Please let me know.
one kg mutton grinded onion ginger and onion and grinded cashew and almonds paste and down pandan cut into strips and ketubar leaves with curd 8 tablespooons .
lit the stove put the muttton and the above grinded ingredient s and down pandan salt and curd .in another pot add in babas cmeat currry powder and half a spoon of salt and garam masala and chilly powder tumeric powder and put some oil fry some chopped onion green chillies and and and above powders into it it and boil it for 10 15 minus
inally pour in the first batch of pot with second pot and boil for 10 mins and let it simmer.
onion chopped and dry chilllies asssam soaked tumeric poder garlic with skin hit it with a knife curry leaves tomatoes 4 quated .
lit the pot with some oil put in chopped onion driied chillies
with chopppped curry leves let it boil for 10 minute in another pot put in one spoon of oil pour in assam and tumeric powder and add in tomatoes some lethilis with the tomatoe let it simmer pour in the contents into second pot and let it boil for 5 mins

You have wonderful recipe collection.I have a query.Whenever i bake using banana be it muffin or cake,i see lots of hair like strands,which becomes darker as days go by.Is it due to the banana variety?This puts off my family from eating it.Can you tell me what could be the reason.Thank you for taking your time.

I tried the Banana Cake with Rava, instead of coconut milk, i used pasturised full cream milk. The cake was a little hard..any comments?

This morning I baked the Banana Rava Cake. I did not mash the bananas well and realized this after mixing it with sooji. I blended the mixture and made it into a smooth paste. I fried the sooji last night and soaked it in Coconut milk over night. I baked the bread for about an hour. It tasted so yummy. Thanks to the list of Eggless Cakes you posted…..I developed a liking to baking cakes. Thank you for all the recipes.
