Banana Cake

After trying many things with my limited resources here, I have been trying my luck with cakes these days. Before coming here, I knew only two types of cakes, one is the simple egg cake and the delicious date cake. I will post the recipes of these two soon.I had thought that preparing cake is very difficult and long procedure. But now I think it is as simple as any other dish. But still I can not make the fabulous looking cakes that we get in bakery. I hope one or the other day I will succeed in making them too.

Recently I had lot of ripe bananas at home. So I cooked all possible dishes with them. This cake was one of them.

Ingredients:
Banana 1
Egg 1
All purpose flour 1 cup
Baking soda 1 tea spn
Sugar 3/4th cup
Butter 1/2 cup
Cashew nuts 1 tbl spn
Salt 1/4th tea spn

PS: If you use ‘baking powder’ instead of ‘baking soda’, cake becomes a bit harder.

Method:
Sieve together flour and soda. Keep it aside.
Beat sugar in butter till it becomes a smooth paste. Then add egg and beat again.
Now add mashed banana and mix well. Add this mixture to flour and mix slowly.
Add some cashew nuts if desired.
Bake in a greased vessel for 40min at 350F.

Makes : 8 pieces
Preparation time : 1 hr(Including baking time)

    Shilpa: Archana, you need not melt the butter. Just keep it outside the refrigerator for around an hour so that it comes to room temperature. Then use it, so that the sugar can be easily mixed with it.

  6. I tried simple egg cake recipe. The dough raised in the oven..but towards end of baking the middle of the cake came down….can you tell me how to rectify this problem…I used 1/4 tsp baking soda for egg cake.

    Shilpa: I think the oven temperature was too low. Sometimes that causes the sunken centers. There are other reasons too, but since the recipe is tried and tested many times, I feel the temperature might be the problem. Also please follow the recipe exactly, if you want, reduce the measurements proportionately.

    I tried this cake and it was fabulous. But i want to ask u onething, when i turn the cake upside down on a plate the lower side becomes moist after cooling and the cake sticks to the plate. Any tip on this?

    Shilpa: Sorry, as of now, don’t have any tips to prevent this. Will find out.

    Thanks for your great recipe! there’s one thing though – after i have a slice I can feel a tinge of the soda. I guess I need to use a little less baking soda? I used just abt a teaspoon.

  11. Shilpa, Thanx for the recipes….one query…in some cakes u used baking soda and in some baking powder…what is the difference and for which cakes u shud use soda

    i love to try out different types of cakes, but each time i get a different texture. I’ve got this new microwave, but it can be set only upto 220 deg. max. Can u tell me how to go about for the simple egg cake or the banana cake.

  14. Hi Shilpa! I rely appreciate ur effort, for teaching young ones most esp young girls on how to become good mother. But i also’ve a ? Will 1 banana and 1 egg enough for that amt of flour? And what does cashew nut do on the cake.

    which is the good way to perfect the soft cake.

    shilpa: Use egg beater. Do not use mixer for it.

    I have tried ur date cake as well as this one.. but everytime the bad luck happening is that only the top portion of the cake bakes well and bottom part remains the same dough.. I have tried with exact measurements and temperature. dont know why this is happening.. please advice how to solve this issue..

    Shilpa: kEep in the middle rack of oven. Also, try baking for a little longer on little low temperature.
