Egg curry with tomato gravy

Ingredients:
Boiled Eggs 5
Onions 2
Tomatoes 4
Chilli powder 2 tea spns
Chicken masala or garam masala 1 tea spn
Mustard seeds 1/4 tea spn
Jeera 1/4 tea spn
Coriander leaves
Salt
Oil

Method:
Heat oil and add mustard & cumin seeds. When they start spluttering add finely chopped onions. Fry till onions turn slightly brownish. Add finely chopped tomatoes (or cooked and mashed tomatoes). Fry till oil seperates. Then add sufficient water, chilli powder, chicken masala(or garam masala), salt. Cook for 5 minutes. Put eggs(put some slits on eggs so that the masala reaches inside of the egg). Cook for 2-3 minutes. Garnish with coriander leaves. Serve hot.

    And this is one of his favs

    My version:
    After adding the tomatos in the above recipe.. cook for 2 mins.. cool the mixture and grind it… then again fry it till the oil seperates.. This stops the dish from leaving water at the edges..

    BTW are u a manglorean?

    In all egg and non-veg dishes I like to add a little haldi (turmeric) powder. In the above recipe I would add 1/2 tsp haldi powder.
    Otherwise we make this at home quite regularly. Its an absolute fantastic egg curry to make.

    Hi Shilpa,
    trust me its horrible to even look at that snap u have pasted above,its watery and I am sure it will like kalgacchhu.

    Egg Curry with tomato is simple.

    1TbSpn oil
    2 onions finely chopped,
    7 Tomatoes finely chopped.

    Heat oil and add onions and pinch of turmeric powder to it.
    Once the onions are light brown, add finely chopped tomatoes to it.
    Close the lid and keep it on medium flame.
    after 4 mnts open the lid and mash the tomato in that.
    and mix it, please note that never add water, it spoils the taste.we can see oil separted from gravy.
    Now add salt , dhaniya powder(MTR’S) and red chilly powder.Thats it.add more dhaniya powder, i like it.
    Mix it thoroughly.
    then 2 ways from here.
    either add the sliced boiled egges into it.

    or

    jusy make some space in the pan and break the eggs into it and cover the lid with low flame.
    after some time reverse the eggs and again cover the lid with low flame.

    and u r done.
